Both models feature a 9-inch Teflon-coated steel blade, a full-tang, a 6-inch nonslip thermoplastic-polymer handle wrapped in synthetic rubber with thumb and finger pads, and a trigger grip and safety guards to protect your fingers from the blade and fish spines. The Flex fillet knife, with its flexible blade, is designed for filleting and boning duties on medium-size fish like cobia, snapper and grouper, while the Stiffie is fitted with a beefy 2 millimeter blade for quartering, carving, boning and filleting larger fish like tunas, swordfish and dolphin.
